  • 1 cup grated carrots
  • 1 cup chopped bell peppers (mixed colors)
  • 1 small onion, finely chopped
  • 2 tsp garlic powder
  • 1 cup whole wheat breadcrumbs
  • 1 large egg (or 1 tbsp flaxseed meal + 3 tbsp water for vegan option)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the chickpeas until mostly smooth, leaving some texture.
