- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter, softened

- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pound chicken breasts between plastic wrap until 1/2 inch thick.
- In a bowl, mix softened butter, minced garlic, parsley, salt, and pepper to create the garlic herb butter.
- Place a dollop of the mixture on each chicken breast, fold over the sides, and roll tightly.
- Set up a breading station with seasoned flour, beaten eggs, and panko breadcrumbs. Coat each chicken roll first in flour, then egg, and finally breadcrumbs.
- Heat oil in a skillet over medium heat and fry the chicken rolls until golden brown on all sides (about 4 minutes per side). Transfer to a baking dish.
- Bake for 20 minutes or until internal temperature reaches 165°F (74°C). Drizzle with lemon juice before serving.
