  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, finely chopped
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pound chicken breasts between plastic wrap until 1/2 inch thick.
  2. In a bowl, mix softened butter, minced garlic, parsley, salt, and pepper to create the garlic herb butter.
  3. Place a dollop of the mixture on each chicken breast, fold over the sides, and roll tightly.
  4. Set up a breading station with seasoned flour, beaten eggs, and panko breadcrumbs. Coat each chicken roll first in flour, then egg, and finally breadcrumbs.
  5. Heat oil in a skillet over medium heat and fry the chicken rolls until golden brown on all sides (about 4 minutes per side). Transfer to a baking dish.
  6. Bake for 20 minutes or until internal temperature reaches 165°F (74°C). Drizzle with lemon juice before serving.
