Description

  • 2 cups roasted butternut squash (about 1 medium squash)
  • 2 large eggs
  • 1 cup all-purpose flour (or whole wheat flour)
  • 4 green onions, finely chopped
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise, place cut-side down on a baking sheet lined with parchment paper, and roast for 25–30 minutes until tender. Allow to cool slightly before scooping out the flesh.
  2. In a large bowl, mash the roasted squash until smooth. Mix in eggs, flour, chopped green onions, cumin, salt, and pepper until well combined.
  3. Form small patties (about two tablespoons each) from the mixture.
  4. Heat oil in a skillet over medium heat. Cook fritters in batches for about 3–4 minutes per side until golden brown and crispy.
  5. For the yogurt dip, mix Greek yogurt and lemon juice in a bowl; season with salt and pepper to taste.
  6. Serve the fritters warm with the yogurt dip.
