Ingredients

  • 2 medium Russet potatoes (about 300g)
  • 3 strips thick-cut bacon
  • 1 cup shredded cheddar and mozzarella cheese blend (100g)
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 2 tbsp chopped chives

Instructions

  1. Wash and slice the russet potatoes into 1/4-inch rounds, then pat them dry with paper towels.
  2. Toss the potato slices in a bowl with olive oil, salt, and pepper until evenly coated.
  3. Preheat your air fryer to 400°F (200°C). Place potato slices in a single layer in the fryer basket and cook for 12-15 minutes, shaking halfway through.
  4. While potatoes are cooking, fry bacon until crispy (8-10 minutes), then chop into small pieces.
  5. After removing the potatoes from the air fryer, layer shredded cheese and bacon on top of each slice. Return to the air fryer for an additional few minutes until cheese is melted.
  6. Garnish with chopped chives before serving.
