  • 1 can (14 oz) artichoke hearts, drained and rinsed
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • ½ cup mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Drain and thoroughly pat dry the artichoke hearts.
  3. In one bowl, whisk the eggs; in another, combine panko breadcrumbs, garlic powder, salt, pepper, and Parmesan cheese.
  4. Dip each artichoke heart into the egg mixture, then coat with breadcrumb mixture until fully covered.
  5. Arrange breaded artichokes in a single layer in the air fryer. Cook for 12-15 minutes until golden brown.
  6. For lemon aioli, mix mayonnaise with lemon juice and additional garlic powder until smooth.
  7. Serve warm drizzled with lemon aioli.
