  • 1 lb ground turkey
  • 2 cups fresh spinach, chopped
  • ½ cup plain breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, spinach, breadcrumbs, Parmesan cheese, egg, and garlic. Mix until well combined.
  3. Form mixture into equal-sized meatballs (about 2 tablespoons each) and place on the baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. In a saucepan over medium heat, combine heavy cream and chicken broth, stirring until warmed. Add lemon juice, seasoning with salt and pepper.
