  • 34 boneless, skinless chicken breasts (about 1.52 lbs)
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese (full-fat)
  • 1 cup low-sodium chicken broth
  • 1 cup long-grain white rice
  • 1/2 cup bacon bits (pre-cooked)
  • 2 green onions (sliced)

Instructions

  1. 1. Place boneless chicken breasts in the bottom of the slow cooker.
  2. 2. Sprinkle ranch seasoning over the chicken. Pour in chicken broth and top with cream cheese.
  3. 3. Cover and cook on low for 6 hours.
  4. 4. After cooking, shred the chicken in the slow cooker using two forks. Stir in rice.
  5. 5. Cover again and cook on high for an additional 30 minutes until rice is tender.
