Perfect for chilly evenings, this easy-to-make recipe transforms simple ingredients into a deliciously satisfying dish that brings family and friends together. Ingredients

Scale
  • 3 cups russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup bacon bits (cooked)
  • ¼ cup fresh chives, chopped

Instructions

  1. Peel and dice the russet potatoes into bite-sized pieces. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  3. Add diced potatoes and broth to cover them by an inch. Bring to a boil, reduce heat, and simmer for 15-20 minutes until tender.
  4. Blend the soup using an immersion blender or transfer to a standard blender until smooth.
  5. Stir in heavy cream gradually until you reach your desired creaminess; let it simmer on low for 5 minutes.
  6. Serve warm in bowls topped with bacon bits and chives.
