  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups Yukon Gold potatoes, diced
  • 6 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced Yukon Gold potatoes in olive oil, salt, and pepper; spread evenly on a baking sheet. Roast for 25-30 minutes until golden brown and fork-tender.
  3. While potatoes roast, season chicken breasts with salt and pepper. In a skillet over medium heat, sear chicken for about 5 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and chicken broth while stirring continuously; mix in grated Parmesan cheese until melted and smooth.
  5. Serve roasted potatoes topped with seared chicken and creamy garlic sauce drizzled over the top.
