  • 2 ripe avocados
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. Boil the red potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool before cutting into bite-sized pieces.
  2. Dice the avocados and squeeze lime juice over them to prevent browning. Chop the red onion and cilantro.
