  • 1 can (7 oz) chipotle peppers in adobo sauce (use 12 peppers)
  • ½ cup breadcrumbs
  • ¼ cup fresh cilantro, chopped
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt to taste

Instructions

  1. Prepare ingredients by chopping the onion and mincing the garlic.
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, chopped cilantro, minced chipotle pepper, and salt. Roll into golf ball-sized meatballs.
  3. In a large pot over medium heat, drizzle olive oil and sauté the diced onion until translucent (about 5 minutes). Add minced garlic for another minute.
  4. Pour in vegetable broth and bring to a simmer. For extra flavor, add an additional chipotle pepper and some adobo sauce.
