  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 cup chopped nuts (almonds or pecans)
  • 1/2 cup dried fruit (cranberries or raisins)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. 2. In a large bowl, whisk together pumpkin puree, honey (or maple syrup), and melted coconut oil until smooth.
  3. 3. In another bowl, combine rolled oats, spices, and chopped nuts.
