- 1 cup fresh or frozen sweet green peas
- 2 medium carrots, sliced into rounds
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides (about 5 minutes), then remove from pot.
- In the same pot, sauté onions and carrots for about 5 minutes until softened. Add minced garlic during the last minute.
- Return beef to the pot along with peas, bay leaves, tomato paste, and beef broth. Stir well.
- Bring to a boil, then reduce heat to low and simmer uncovered for about an hour until beef is fork-tender.
- Remove bay leaves and season with salt and pepper. For a creamier texture, mash some peas against the side of the pot.
- Serve hot in bowls with crusty bread or over rice.
