  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 cup fresh or frozen sweet green peas
  • 2 medium carrots, sliced into rounds
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides (about 5 minutes), then remove from pot.
  2. In the same pot, sauté onions and carrots for about 5 minutes until softened. Add minced garlic during the last minute.
  3. Return beef to the pot along with peas, bay leaves, tomato paste, and beef broth. Stir well.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for about an hour until beef is fork-tender.
  5. Remove bay leaves and season with salt and pepper. For a creamier texture, mash some peas against the side of the pot.
  6. Serve hot in bowls with crusty bread or over rice.
