  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced into thick rounds
  • 3 medium Yukon gold potatoes, peeled and cubed
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides (about 5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions for about 3 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  3. Return the beef to the pot and add carrots, potatoes, tomato paste, thyme, bay leaves, and beef broth until everything is submerged.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours or until meat is fork-tender.
  5. Discard bay leaves, taste for seasoning adjustments, and serve hot garnished with fresh parsley if desired.
