- 2 lbs beef chuck roast, cut into 1-inch cubes
- 4 medium carrots, sliced into thick rounds
- 3 medium Yukon gold potatoes, peeled and cubed
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the beef with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides (about 5 minutes per side). Remove and set aside.
- In the same pot, sauté onions for about 3 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
- Return the beef to the pot and add carrots, potatoes, tomato paste, thyme, bay leaves, and beef broth until everything is submerged.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours or until meat is fork-tender.
- Discard bay leaves, taste for seasoning adjustments, and serve hot garnished with fresh parsley if desired.
