  • 2 medium sweet potatoes, diced
  • 1 can (14 oz) full-fat coconut milk
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch fresh ginger, grated
  • 2 tbsp curry powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add minced garlic and grated ginger; cook for an additional minute.
  3. Stir in curry powder, salt, and pepper; let the spices mingle for about two minutes.
  4. Add diced sweet potatoes and rinsed red lentils to the pot. Pour in vegetable broth and coconut milk.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 25 minutes or until sweet potatoes are tender.
  6. Blend the soup until smooth using an immersion blender or transfer batches to a blender carefully.
  7. Serve warm, garnished with fresh cilantro or yogurt.
