  • 2 medium carrots, diced
  • 2 celery stalks, diced

  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté onions and celery in olive oil over medium heat for about 5 minutes until tender. Add carrots and garlic; cook for another minute.
  2. Add chicken breasts and cover with broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
