  • 4 cups cauliflower florets
  • 2 whole garlic bulbs
  • 2 cups sharp cheddar cheese, shredded
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. While the garlic roasts, chop cauliflower into florets. In a large pot over medium heat, sauté cauliflower in olive oil for about 5 minutes until slightly softened.
  3. Add vegetable broth to the pot and simmer for about 10 minutes until cauliflower is tender.
  4. Squeeze roasted garlic cloves into the pot. Blend the mixture until smooth using an immersion blender.
  5. Return the blended soup to low heat and stir in cheddar cheese and heavy cream until melted.
  6. Season with salt and pepper to taste before serving.
