  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 1 cup quinoa, rinsed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or cilantro), for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed butternut squash in olive oil, salt, and pepper until well-coated. Spread evenly on the baking sheet.
  3. Roast for 25-30 minutes until golden brown and tender, flipping halfway through.
  4. In a saucepan, combine rinsed quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until fluffy.
  5. Fluff quinoa with a fork and mix in half of the roasted squash; adjust seasoning as needed.
  6. Serve in bowls topped with remaining squash and fresh herbs.
