  • 1 cup green or brown lentils
  • 2 medium Yukon Gold or Russet potatoes, diced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Dice onion, carrots, celery, and potatoes.
  2. In a large pot over medium heat, add olive oil. Sauté onion until translucent then add garlic and cook for another minute.
  3. Stir in carrots and celery; sweat for about five minutes. Add potatoes and cook until slightly tender.
  4. Pour in rinsed lentils and vegetable broth; add bay leaves and thyme. Bring to a boil then lower heat to simmer uncovered for about 30 minutes until tender.
  5. Season with salt and pepper to taste; serve warm.
