Ingredients

  • 1 cup green or brown lentils
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach, packed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until golden brown, then add minced garlic and cook for an additional minute.
  2. Stir in rinsed lentils, toasting them lightly for about 2 minutes.
  3. Pour in vegetable broth along with salt and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  4. Add fresh spinach and cook for another 2 minutes until wilted.
  5. Remove from heat and stir in lemon juice. Adjust seasonings as needed.
  6. Serve hot, garnished with a drizzle of olive oil or lemon zest if desired.
