Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until golden brown, then add minced garlic and cook for an additional minute.
- Stir in rinsed lentils, toasting them lightly for about 2 minutes.
- Pour in vegetable broth along with salt and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
- Add fresh spinach and cook for another 2 minutes until wilted.
- Remove from heat and stir in lemon juice. Adjust seasonings as needed.
