  • 6 medium carrots, chopped
  • 2 tbsp fresh ginger, grated
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp lime juice

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté chopped onion and minced garlic for about 5 minutes until soft and fragrant.
  2. Stir in chopped carrots and grated ginger; cook for another 5 minutes until they begin to soften.
  3. Pour in the vegetable broth, bring to a gentle boil, then reduce heat and simmer for about 20 minutes until carrots are tender.
  4. Carefully blend the soup until smooth using an immersion blender or in batches with a traditional blender.
  5. Return blended soup to the pot over low heat; stir in coconut milk and simmer for another 5 minutes.
  6. Remove from heat, add lime juice, and adjust seasoning if needed.
