  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, melt butter and sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
