From start to finish, this recipe takes about 30 minutes, making it a great option for a weeknight. The dressing is simple to whisk together, and the cutlets fry up quickly while you assemble the rest of the salad.

Why will you love Chicken Cutlet Caesar Salad?

Pounding the chicken into thin cutlets ensures it cooks quickly and evenly, staying tender and juicy inside.

A three-step breading process (flour, egg, panko) creates a substantial, crunchy coating that adheres well to the chicken during frying.

Making your own Caesar dressing gives you control over the flavor. It’s fresher than bottled and easy to adjust to your liking.

Chicken Cutlet Caesar Salad Ingredients

• Chicken: Boneless, skinless chicken breasts are ideal. You can also buy thin-sliced chicken cutlets to save the step of pounding them.

• Lettuce: Romaine is classic for a reason, but Little Gem lettuce is a great alternative. The mix of romaine and kale adds nice texture and flavor.

• Anchovy Paste: This adds a deep, savory flavor that is essential to Caesar dressing. If you dislike anchovies, you can omit it, but the dressing will lack its characteristic taste.

• Panko: These Japanese-style breadcrumbs are lighter and flakier than regular breadcrumbs, which makes the chicken extra crispy.

• Fennel: Adds a subtle, sweet anise flavor and a lovely crunch. If you’re not a fan, you can leave it out or substitute with thinly sliced celery.

• Parmesan Cheese: Using a block of Parmesan and grating it yourself will give you the best flavor and texture for both the dressing and the breading.

How to Make Chicken Cutlet Caesar Salad

Step 1: Make the Dressing and Prep the Salad

Start by making the Caesar dressing. Whisk together all dressing ingredients in a bowl until smooth. Next, chop your romaine, kale, and fennel and combine them in a large salad bowl.

Step 2: Prepare and Bread the Chicken

Create four thin cutlets by slicing the chicken breasts in half and pounding them to an even ½-inch thickness. Season them well, then set up your breading station with flour, beaten eggs, and a panko-parmesan mixture. Coat each cutlet in flour, then egg, then the panko mix.

Step 3: Fry the Cutlets and Assemble the Salad

Heat oil in a large skillet and fry the chicken cutlets in batches for 2-3 minutes per side, until golden and cooked to 165°F. While they rest on a wire rack, toss the salad greens with dressing. Slice the chicken, place it over the salad, and serve right away.

What to Serve with Chicken Cutlet Caesar Salad

This is a complete meal on its own. If you like, serve it with a side of toasted garlic bread to soak up any extra dressing.

Helpful Tricks for Chicken Cutlet Caesar Salad

Food Safety: Always cook chicken to a safe minimum internal temperature of 165°F (74°C). Use a meat thermometer for accuracy.

Don’t overcrowd the pan when frying the chicken. Cooking in batches ensures the oil temperature stays high, which results in a crispier crust.

The Caesar dressing can be made up to 3 days in advance and stored in an airtight container in the refrigerator.

Thinly slicing the fennel is key. A mandoline works well for this if you have one, but a sharp knife is also fine.

How to Store and Freeze Chicken Cutlet Caesar Salad

For best results, store the components separately in airtight containers in the refrigerator for up to 2 days. The dressing will keep for 3-4 days. Reheat the chicken cutlets in a 375°F (190°C) oven or an air fryer for 5-8 minutes, until warm and crisp. Do not microwave.

Chicken Cutlet Caesar Salad Recipe FAQs

Can I make this in an air fryer?

Yes. To air fry the chicken cutlets, preheat your air fryer to 400°F (200°C). Spray the basket and both sides of the breaded cutlets with cooking spray. Cook for 8-10 minutes, flipping halfway, until golden and the internal temperature reaches 165°F (74°C).

What can I do if I don’t like anchovies?

The anchovy paste provides a classic savory, umami flavor. If you prefer to leave it out, the dressing will still be good, just milder. You could add a little extra Worcestershire sauce or a splash of soy sauce to add some depth.

Can I prepare parts of this salad ahead of time?

Absolutely. The dressing can be made and stored in the fridge for up to 3 days. The vegetables can be washed, dried, and chopped a day ahead. For the best texture, it’s best to bread and cook the chicken just before serving.

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts, about 2 large breasts, 680g
  • Kosher salt and black pepper
  • 1 cup all-purpose flour 125g
  • 3 large eggs
  • 1 ½ cups panko breadcrumbs 115g
  • 1 cup grated Parmesan cheese divided, 100g
  • ½ cup neutral oil for frying, 120ml
  • 2 heads romaine lettuce chopped
  • 1 bunch lacinato kale stems removed and thinly sliced
  • 1 medium fennel bulb cored and thinly sliced
  • 1 cup mayonnaise 225g
  • 1 tbsp Worcestershire sauce 15ml
  • 1 tbsp anchovy paste 15g
  • 1 tbsp fresh lemon juice 15ml
  • 1 tsp Dijon mustard 5g
  • 1 ½ tbsp olive oil 22ml
  • 1-2 cloves garlic minced

Instructions

  • First, make the dressing. In a medium bowl, whisk together the mayonnaise, Worcestershire sauce, anchovy paste, lemon juice, Dijon mustard, olive oil, minced garlic, and ⅓ cup (35g) of the grated Parmesan cheese. Season with salt and pepper to taste. Set aside.
  • Prepare the salad greens. In a large salad bowl, combine the chopped romaine, sliced kale, and sliced fennel. You can wash and dry the greens before or after chopping.
  • Slice the chicken breasts in half horizontally to create 4 thinner cutlets. Place them between two sheets of plastic wrap and pound to an even ½-inch thickness. Season both sides of each cutlet generously with salt and pepper.
  • Set up a breading station with three shallow dishes. Place the flour in the first dish. Lightly beat the eggs in the second. In the third, combine the panko breadcrumbs and the remaining ⅔ cup (65g) Parmesan cheese.
  • Coat each chicken cutlet first in flour, shaking off the excess. Then dip it into the egg, letting any extra drip off. Finally, press the cutlet firmly into the panko mixture, coating both sides completely.
  • Heat the neutral oil in a large skillet over medium-high heat. When the oil is shimmering (about 350°F / 175°C), carefully add two cutlets. Cook for 2-3 minutes per side, until golden brown and cooked through. Transfer to a wire rack.
  • Check that the chicken is cooked to a safe internal temperature of 165°F (74°C). Repeat with the remaining two cutlets, adding more oil if the pan looks dry.
  • Add a few spoonfuls of dressing to the salad greens and toss to coat. Divide the salad among four plates. Slice the warm chicken cutlets and place them on top of the salad. Serve immediately, with extra dressing and Parmesan cheese on the side.
