  • 2 cups pre-cooked cornmeal (masarepa or masa harina)
  • 1 ½ cups warm water
  • 1 tsp salt
  • 1 cup shredded mozzarella or queso blanco
  • 2 tbsp butter or oil (for frying)

Instructions

  1. In a large bowl, combine cornmeal and salt. Gradually add warm water, mixing until the dough is smooth and not sticky.
  2. Divide the dough into golf ball-sized portions and flatten each into discs about half an inch thick.
  3. Preheat a skillet over medium heat and add butter or oil to coat the bottom.
  4. Cook arepas for about 4 minutes on each side until golden brown and crispy.
  5. When flipping for the second time, sprinkle cheese on one side, cover with a lid for about a minute to allow melting.
  6. Serve hot and enjoy with avocado slices or salsa.
