- 1 tsp dried thyme
- 2 bay leaves
- 4 cups chicken broth or water
- 2 cups long-grain white rice
- Salt and pepper to taste
Instructions
- Soak the dried red beans overnight in water. For a quick soak, boil them for two minutes and let sit for one hour.
- In a large pot, heat oil over medium heat and sauté the chopped onion, bell pepper, celery, and minced garlic until soft (about five minutes).
- Add the sliced Andouille sausage to the pot and cook until browned (about five minutes).
- Stir in the soaked beans, cayenne pepper, thyme, bay leaves, salt, and pepper. Pour in enough chicken broth or water to cover the mixture by an inch.
